Poor–man’s Asparagus is an interesting wild vegetable that in recent years has fallen into disuse. With a good watering and well fertilized this plant can reach in 80cm tall. It has many uses in cooking (it is harvested the following year):

-The Tender leaves can be used like spinach (the flavor is spicy)

- The heads can be cooked like broccoli

- The stems can be eaten just like asparagus.

- From its roots desserts are prepared in the Balkan countries.
