Caraway (Carum carvi)

Caraway has been used as a condiment for over 3000 years. Originally this plant comes from the Middle East, but was soon grown in the Mediterranean area. It is mentioned in the time of Pliny the Elder. Caraway is a biennial plant of the Apiaceae family. It flowers from from May to June.

It is very interesting that the leaves can be used as a spice with a taste between parsley and dill. Its seeds are used especially with meat and game dishes, but they are also suitable for cheese and bread.

Soil: Caraway grows well in clay soils.

In winter: very resistant to cold.

Uses:

In the kitchen: whole caraway seeds if stored properly barely lose their aroma. Apart from the uses mentioned it is also found as an ingredient in liqueurs and other alcoholic beverages.
