Winter Purslane, Miner’s lettuce seeds (Claytonia perfoliata)

This variety originated in western North America and northern Alaska, it is very durable and is also cultivated in Europe and North America as winter vegetable (September to March).

All parts of the plant are edible, preferably the tender salad leaves, bigger leaf for cooking. In contrast to many other vegetables for salad, claytonia contains less nitrates and is very rich in vitamin C.

This plant was used as a medicinal herb by some Indian tribes of North America. The plant extract externally applied helps rheumatic pain.
