Curly parsley (Petroselinum crispum)

Curly parsley has a more compact growth compared to flat leaf variety and its aroma is a little less intense. In the kitchen parsley should always be used fresh, and in any case better as frozen than dried as it loses practically all its aroma upon drying. Parsley with chervil, chives and tarragon are the famous French typical condiment called "fine herbs".
