Calçot Seeds "blanc de Lleida"
At first glance you might think that the calçot is a type of leek or spring onion, but it is a sweet variant of the common onion (Allium cepa), consumed mainly in Catalan cuisine.
To obtain the desired length (approx. 20 - 25 cm) of the white delicate part, a special procedure is required.
In Spain it is sown in winter, small onions are planted and will cover you encalzadas from September until spring to harvest in Feb.-April.
In Spain the seeds are sown indoors in Dec/Jan and the small onions are planted out in February/March. They are allowed to grow unto June/July and are then harvested and allowed to dry outdoors until they are replanted in mid August – September. They are harvested in the following February - April
